A moreish crunchy slice that's perfect for lunchboxes.
Ingredients
150g SR flour
40g cocoa
80g broken up Vitabrits (about 4)
65g desiccated coconut
90g caster sugar
150g butter, in pieces
80g golden syrup
1 tsp vanilla extract
Chocolate icing
Extra desiccated coconut, optional
Method
Line a small slice tray with baking paper. Preheat oven to 170C
Add flour, cocoa, Vitabrits, coconut and sugar to bowl. Mix 2 sec/sp 5.
Set aside.
Add butter and golden syrup to bowl. Melt 4 min/100/sp 2.5.
Add back flour mixture along with vanilla extract and mix 4 sec/sp 3.5 or until it all comes together.
Spread into tray and smooth out surface.
Bake for 25 to 30 minutes. Leave in tray for 10 minutes before removing to a chopping board.
Ice with chocolate icing while still slightly warm, sprinkle with extra coconut, if desired and cut into slices. Once cold, it’s more difficult to slice without breaking.
