{"id":112,"date":"2011-12-17T07:50:00","date_gmt":"2011-12-17T07:50:00","guid":{"rendered":"http:\/\/islandrooster.net\/dev\/food\/index.php\/2011\/12\/17\/pumpkin-spinach-salad\/"},"modified":"2020-08-17T01:36:29","modified_gmt":"2020-08-17T01:36:29","slug":"pumpkin-spinach-salad","status":"publish","type":"post","link":"http:\/\/thermogourmand.com.au\/index.php\/2011\/12\/17\/pumpkin-spinach-salad\/","title":{"rendered":"Pumpkin &#038; Spinach Salad"},"content":{"rendered":"<p>This delicious salad is a combination of two or three and was inspired by two friends Julie &amp; Robyn who both make delicious salads.<\/p>\n<p><b>Pumpkin &amp; Spinach Salad<\/b><br \/>\n1 small butternut pumpkin, peeled and diced to thumbnail size<br \/>\n2 rashers of bacon, cut into small strips and saut\u00e9ed until crisp<br \/>\n2 spring onions, sliced into rings<br \/>\n1\/4 cup pumpkin seeds, lightly toasted<br \/>\n1\/4 cup pistachios, lightly toasted<br \/>\n1 packet baby spinach leaves<\/p>\n<p><b>Dressing<\/b><br \/>\n40ml light olive oil<br \/>\n<b> <\/b>20ml soy sauce<br \/>\n20ml lemon juice<br \/>\n1 clove garlic &#8211; crushed<br \/>\n2 Tbsp brown sugar<\/p>\n<p>Steam or microwave the pumpkin until tender, not mushy. Cool to room temperature.<br \/>\nMix dressing ingredients together in a jar.<br \/>\nLay spinach leaves on a large shallow platter and arrange salad ingredients on top. When ready to serve, top with the dressing.
