I did a sneaky swap with my daughter &#8211; her lamb for my pork.<\/p>\n<p>Recipe developed for TM31.<\/p>\n<p>Tonight&#8217;s tea was Madras Lamb Curry:<\/p>\n<p>1 tsp turmeric<br \/>\n750g boneless leg lamb (can use shoulder, but cook longer)<br \/>\n<i>Cut lamb into 2.5cm cubes and massage turmeric in.<\/i><\/p>\n<p>2 tsp fennel seeds<br \/>\n2 tsp ground cinnamon<br \/>\n2 tsp ground cardamom<br \/>\n<i>Roast in Thermomix for 5 minutes\/Varoma\/Speed 2.\u00a0<\/i><br \/>\n<i><b>Remove<\/b><\/i><\/p>\n<p>2 tsp coriander seed<br \/>\n1\/2 tsp dried chilli flakes (more if you like it hotter)<br \/>\n1 tsp cumin seeds<br \/>\n<i>Roast for 5 minutes\/Varoma\/Speed 2.<\/i><br \/>\n<i>Add:<br \/>\n<\/i><br \/>\n1 tsp fenugreek seeds<br \/>\n<i>Grind on speed 6 for a few seconds. Place paper towel between lid and bowl. Not recommended by Vorwerk. Do so at your own risk.<\/i><\/p>\n<p><i>Add:<\/i><br \/>\n5 roughly chopped garlic cloves<br \/>\n2.5cm piece ginger, roughly chopped<br \/>\n2 Tbsp oil or ghee<br \/>\n<i>Blend to a smooth paste on speed 7, scraping bowl down every few seconds.<\/i><br \/>\n<i>Cook for 5 to 10 minutes\/Speed 3 until fragrant.<\/i><br \/>\n<i> <\/i><br \/>\n<i> Add:<\/i><br \/>\nLamb<br \/>\n250ml coconut milk (reserve rest of 375ml can)<br \/>\n<i>Cook on Varoma\/Speed spoon\/Reverse\/10 minutes.<\/i><\/p>\n<p><i>Add remaining coconut milk and reserved spices. Season with salt to tast.<\/i><br \/>\n<i> <\/i><br \/>\n<i>Cook on 90\/Speed spoon\/Reverse\/60 minutes.<\/i><br \/>\n<i>Add:<\/i><br \/>\n2 Tbsp lime juice or tamarind to taste<\/p>\n<p>Check for seasoning and tenderness.
