Not too difficult at all, really.<\/p>\n<p>My latest baking effort today is a delicious muffin, using a couple of those lovely little bananas we&#8217;ve been getting in the shops lately. They were the last of a large bunch and were only really good for cooking.<\/p>\n<p>Annoyingly, this quantity made 7 muffins. I have two 6 hole silicon muffin trays. Next time, I&#8217;d make 1 1\/2 times the quantity to at least get 10 muffins.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><a href=\"http:\/\/bushgourmand.com.au\/wp-content\/uploads\/2014\/07\/Muffins1.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-medium wp-image-951\" src=\"http:\/\/bushgourmand.com.au\/wp-content\/uploads\/2014\/07\/Muffins1-269x300.jpg\" alt=\"\" width=\"269\" height=\"300\" srcset=\"http:\/\/thermogourmand.com.au\/wp-content\/uploads\/2014\/07\/Muffins1-269x300.jpg 269w, http:\/\/thermogourmand.com.au\/wp-content\/uploads\/2014\/07\/Muffins1-917x1024.jpg 917w, http:\/\/thermogourmand.com.au\/wp-content\/uploads\/2014\/07\/Muffins1.jpg 1936w\" sizes=\"(max-width: 269px) 100vw, 269px\" \/><\/a><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/2.bp.blogspot.com\/-KnxQxB7bAPM\/UlUGxlmbloI\/AAAAAAAABNU\/7hyEn03m7ss\/s1600\/Spiced+Banana+Pecan+Muffins.JPG\"><img decoding=\"async\" src=\"http:\/\/islandrooster.net\/dev\/food\/wp-content\/uploads\/2013\/10\/Spiced-Banana-Pecan-Muffins.jpg\" alt=\"\" width=\"320\" height=\"239\" border=\"0\" \/><\/a><\/div>\n<p><b>Spiced Banana Pecan Muffins<\/b><\/p>\n<p>150g white spelt flour<\/p>\n<div style=\"font-family: Arial;\">50g wholemeal flour (or spelt if wanting wheat free)<\/div>\n<div style=\"font-family: Arial;\">1 \u00bd tsp baking powder<\/div>\n<div style=\"font-family: Arial;\">\u00bd tsp bicarb soda<\/div>\n<div style=\"font-family: Arial;\">1 tsp cinnamon<\/div>\n<div style=\"font-family: Arial;\">1 tsp mixed spice<\/div>\n<div style=\"font-family: Arial;\">60g melted butter<\/div>\n<div style=\"font-family: Arial;\">\u00bd cup coconut sugar<\/div>\n<div style=\"font-family: Arial;\">\u00bd cup plain yoghurt<\/div>\n<div style=\"font-family: Arial;\">2 small ripe bananas<\/div>\n<div style=\"font-family: Arial;\">2 eggs<\/div>\n<div style=\"font-family: Arial;\">1\/4 cup chopped pecans<\/div>\n<div style=\"font-family: Arial;\"><\/div>\n<div style=\"font-family: Arial;\"><b>Topping<\/b><\/div>\n<div style=\"font-family: Arial;\">\u00bc cup rapadura<\/div>\n<div style=\"font-family: Arial;\">\u00bd cup pecans<\/div>\n<div style=\"font-family: Arial;\">\u00bd tsp cinnamon<\/div>\n<div style=\"font-family: Arial;\">\u00bd tsp mixed spice<\/div>\n<div style=\"font-family: Arial;\"><\/div>\n<div style=\"font-family: Arial;\">Preheat oven to 200C. Line deep muffin tins with fancy schmancy muffin papers (this is so you can use the paper to remove them from the tin when cooked. If you turn them out, the topping comes off!)<\/div>\n<div style=\"font-family: Arial;\">Blend topping ingredients in food processor or TMX until crumbled. Set saide.<\/div>\n<div style=\"font-family: Arial;\">Place flours, raising agents and spices into processor, sifter or TMX and blend together, speed 5 for 2 seconds. Set aside.<\/div>\n<div style=\"font-family: Arial;\">Melt butter iTMX on 60 for 1 minute, speed 2. Allow to cool a little.<\/div>\n<div style=\"font-family: Arial;\">Add bananas and sugar to melted butter and blend together, speed 5 for 4 seconds. Add yoghurt and eggs and blend again, speed 5 for a few seconds or until smooth.<\/div>\n<div style=\"font-family: Arial;\">Stir in flour mixture, blend on speed 3 using spatula to assist or blend in processor in short bursts until mixed. Stir in pecans with a spatula.<\/div>\n<div style=\"font-family: Arial;\">Pour into muffin papers and sprinkle with topping. Bake for 15 to 20 minutes or until they spring back when gently pressed.
