Apparently, these Spanish cakes are eaten at breakfast! I can&#8217;t imagine eating a cake for breakfast&#8230;.<\/p>\n<p>Recipe developed for the TM31.<\/p>\n<p><b>Megan&#8217;s Magdalenas<\/b><\/p>\n<div class=\"MsoNormal\">Makes about<br \/>\n16140g raw sugar<br \/>\n4 eggs, room temperature<br \/>\n125g melted butter (melted in microwave and allowed to cool a little)<br \/>\n250g plain flour<br \/>\n1 Tbsp baking powder (yes, 1 tablespoon!)<br \/>\nzest from one lemon<br \/>\n1 Tbsp milk<br \/>\nextra sugar<\/p>\n<p>Pre heat oven to 200C<br \/>\nPlace patty pan liners into muffin tins.<\/p>\n<p>Blitz sugar on speed 9 for a few seconds. Scrape down.<br \/>\nPlace butterfly onto blades.<br \/>\nAdd eggs to bowl and whip for 7 minutes\/50 degrees\/speed 4.<br \/>\nSet dial to 1 minute\/speed 4 and add melted butter through the hole.<br \/>\nAdd milk and lemon zest through the hole and continue to mix on speed 4 for a<br \/>\nfew more seconds.<br \/>\nRemove butterfly.<br \/>\nAdd sifted flour and baking powder and mix with aid of spatula on speed 3 &#8211; 4<br \/>\nuntil incorporated, about 20 seconds.<br \/>\nPour into prepared patty pans to only half fill.<br \/>\nSprinkle with extra sugar. This is important. If you don&#8217;t sprinkle with sugar,<br \/>\nthe tops will become sticky after a few hours. If you&#8217;re planning on icing<br \/>\nthem, then don&#8217;t bother sprinkling with sugar.<br \/>\nBake for 16 &#8211; 18 minutes until they&#8217;re a light golden colour.<\/p>\n<p>The first time I made these I didn&#8217;t ice them. They were devoured, just the same.
