Polish Coleslaw

A deliciously different coleslaw without the creamy dressing.
Ingredients
  • 1 large carrot, peeled
  • ½ cabbage - around 250g
  • 1 red or ½ green apple, cored
  • ½ red onion
  • small bunch parsley, leave only
  • 3 Tbsp olive oil
  • juice and zested rind of half a lemon
  • 1 - 2 tsp sugar
  • salt and pepper to taste
  • Cornichons, chopped finely
Method
  1. Chop vegetables into chunks.
  2. Place carrots into Thermomix bowl and chop 4 seconds/speed 5. Remove to a bowl.
  3. Place remaining ingredients, except cornichons into Thermomix bowl. (I only do half at a time, but then you need another bowl to put the mix into).
  4. Chop for 4 seconds/speed 4, helping with spatula. Check consistency and repeat for a few seconds if necessary.
  5. Add cornichons and mix in with spatula or use to decorate.
