Mars Bar Chocolate Cake

Ingredients
  • 350 grams SR flour
  • 40 grams cocoa
  • ½ teaspoon bicarb soda
  • 1 tsp baking powder
  • 150g raw sugar
  • 140g dark chocolate, broken into pieces
  • 3 Mars Bars (53g size), chopped into pieces
  • 250g butter, chopped into pieces
  • 1 Tbsp coffee powder
  • 200g water
  • 1 teaspoon vanilla extract
  • 150 grams buttermilk (To make add 1 tsp of white vinegar to 150g milk. Let for 5 minutes. Stir before using.
  • 4 eggs - room temp
Method
  1. Preheat oven to 150c (fan forced). Grease and line small baking dish.
  2. Add dry ingredients to Thermomix bowl and sift on Turbo 0.5 x 3.
  3. Set aside.
  4. Place sugar into Thermomix bowl and mill 4 sec/sp 9.
  5. Add chocolate and Mars Bars, butter, coffee and water into Thermomix bowl and cook 6 minutes/60/speed 1, increasing to speed 3 as it all begins to melt. Then melt a further 3 min/60/sp 2.5.
  6. Do a final mix to incorporate all the ingredients 10 sec/sp 4.
  7. Add reserved dry ingredients and buttermilk to bowl and mix for 45 sec/sp 1.
  8. Set machine to 1 minute/sp 4 add the eggs one at a time through the lid. Scrape down and mix again 30 sec/sp 4.
  9. Pour mixture into prepared pan.
  10. Bake for around 1¼ hours or so, depending on your oven.
  11. Leave in tin to cool fro 10 to 15 minutes, then turn on to a wire rack.
Notes
Ice with ganache or split in half and place jam in the middle and whipped cream on top. Can also be served warm as a dessert. Pour over warmed ganache, raspberry coulis and serve with whipped cream or ice cream.
