Easy Chocolate Cake

Ingredients
  • 300g plain flour
  • 2 tsp baking powder
  • 1 tsp bi-carb soda
  • 40g cocoa
  • 260g raw sugar
  • 170g butter, cubed, room temperature
  • 1 tsp vanilla
  • 3 eggs
  • 250g milk, soured with 1 Tbsp vinegar
Method
  1. Grease and line a small baking dish. (21cm x 29cm)
  2. Preheat oven to 165c fan forced, 180 non fan forced.
  3. Add flour, cocoa, bi-carb and baking powder to Thermomix bowl.
  4. 2 sec/Turbo (TM31 - 2 sec/sp 10)
  5. Remove to a bowl.
  6. Add sugar to Thermomix bowl and mill 10 sec/sp 9.
  7. Scrape down and add butter.
  8. Mix 10 sec/sp 5.
  9. Scrape down and mix 10 sec/sp 6
  10. Add remaining ingredients and mix 10 sec/speed 4.
  11. Scrape down sides and around the base of the bowl and mix again 10 sec/sp 6 or until smooth. Mix with spatula to ensure all butter and sugar is incorporated into the mixture and, if necessary, mix 5 sec/sp 6.
  12. Pour into baking dish and bake for 40 minutes, checking after 35 minutes.
  13. Cake should spring back when gently touched and should be coming away from the sides of the tin.
  14. Leave in the tin for 10 minutes before carefully turning out on to a wire rack to cool completely.
  15. Ice with chocolate buttercream or ganache.
