A fast and fabulous dinner that serves up to 4 greedy people.
Ingredients
20g olive oil
1 carrot, diced small (or in chunks)
1 stick celery, diced small (or in chunks)
2 tsp vegetable stock paste
2 tsp fried, dried onion flakes (found in Asian stores)
½ tsp garlic powder
1 Nori sheet, cut into slivers with scissors
1000 g boiling water
250 g dried quick-cooking noodles
50 g snow peas, trimmed and cut into pieces (approx. 1 cm)
20 g oyster sauce
20 g soy sauce
1 bunch bok choy, stems sliced and leaves sliced separately
20g olive oil (optional)
Roast pork, chicken, ham, prawns or tofu
1 tsp Chinese Five Spice (optional)
Method
If you don't want to dice up the carrot and celery, just put the chunks into the Thermomix bowl with the oil and chop 5 seconds/speed 5. Check, scrape down and repeat for a couple of seconds if necessary.
If you are hand dicing the carrot and celery, add it to the bowl with the olive oil, dried onion, garlic powder and nori sheets.
Weigh in boiling water and cook 2 min/120/Reverse/speed 2.
Meanwhile, if using meat, chicken, prawns etc, place oil in frying pan and add five spice.
Add diced meat and stir fry for a few minutes. Turn off heat and leave in pan until noodles are cooked.
Add noodles, oyster sauce and soy sauce and cook 2 minutes/120/Reverse/speed 1.
Add bok choy stems and cook a further 1 minute/120/Reverse/speed 1.
Place bok choy leaves and snow peas into ThermoServer. Pour over noodles.
Add mea, chicken etc if using.
Mix altogether and leave for a few minutes for flavours to incorporate.
Serve in bowls.
