Chocolate Cupcakes

Ingredients
  • 50g cocoa powder
  • 120g water
  • 60g butter
  • 60g oil - I use grapeseed
  • 120g caster sugar
  • 1 tsp vanilla extract
  • 165g SR flour
  • ½ tsp bi-carb soda
  • 3 eggs
Method
  1. Preheat oven to 170C.
  2. Line a 12 hole tin with patty pans.
  3. Place cocoa, water and butter into Thermomix bowl and melt 2 min 30 sec/55/sp 1.
  4. Scrape down and around base.
  5. Add oil, sugar, vanilla, flour, bi-carb and eggs.
  6. Mix 15 sec/speed 2.5. Scrape down and mix again on 15 sec/sp 2.5 until blended. Increase to speed 4 for a second or so to do a final blend.
  7. The mixture is fairly liquid. Pour into patty pans ¾ way up.
  8. Bake for 15 - 20 minutes or until the tops spring back when gently touched.
  9. Leave in the tin for a few minutes before turning out on to a wire rack to cool.
  10. Ice with Swiss Meringue Buttercream. Or for a quick Buttercream, try the Cookidooone.
