Eggwhite Mayonnaise

An easy lightly mayonnaise.
Ingredients
  • 200g grapeseed, ricebran or safflower oil
  • 2 eggwhites
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • 2 Tbsp rice malt syrup (opt)
Method
  1. Place a jug onto the Thermomix lid and weigh in the oil. Set aside.
  2. Place butterfly into Thermomix bowl.
  3. Add egg whites. Whip 1 minute/speed 4.
  4. Add vinegar, mustard and salt. Mix 20 seconds/speed 3.
  5. Set machine to 1 minute/speed 3. With MC on, slowly pour oil onto lid allowing it to drip into the bowl.
  6. Add rice malt syrup and mix a further 20 seconds/speed 2.
  7. Place into jars and keep refrigerated.
  8. Use within a month.
Notes
This is a very light mayonnaise, suitable for lettuce salads
As with regular mayonnaise, you can create different flavours.
