Serves: about 6 pancakes or 3 wraps
 
A delicious low carb pancake mix without the spinach! With spinach, it will make a great wrap.
Ingredients
  • 25g almond flour
  • 25g buckwheat flour
  • 50g spinach, if using to make wraps
  • 2 eggs
  • 50g sour cream
  • 30g cream cheese, in chunks
  • 1 tsp baking powder (omit for wraps)
  • pinch salt
  • vanilla or maple syrup extract to taste (for pancakes only)
Method
  1. Add almond flour, buckwheat flour and spinach, if using, to Thermomix bowl.
  2. Blend 10 - 20 seconds/speed 6/MC on
  3. Add remaining ingredients and mix 30 seconds/speed 5/MC on.
  4. If too thick, add a little milk. If too runny, add a little more buckwheat flour.
  5. Pour into heated pan and cook around 1 minute or until bubbles have subsided. Flip and cook a further 30 seconds or so. Place on to a plate and cover with a clean tea towel until all are cooked.
  6. For wraps, spread mixture around pan to make the size your require. Cook as pancakes. Leave to cool completely.
