Sweet & Sour Pork & Rice

- 200 g Jasmine rice
- 4 Tbsp corn starch
- 1 tsp Chinese five spice powder
- ½ tsp bi-carb soda
- ½ tsp salt
- ¼ tsp pepper
- 800 g pork scotch fillet steaks, cut into bit sized pieces
- 1 egg, lightly beaten
- 2 garlic cloves
- 2 cm piece fresh ginger, peeled
- 20g olive or peanut oil
- 120 g tomato passata
- 2 Tbsp tomato paste
- 30 g soy sauce
- 80 g rice wine vinegar
- 70 g white sugar
- 1 x 440g can pineapple pieces in juice, drained, reserve 50g of the juice
- 1 brown onion, cut into large pieces
- 200 g red/green capsicum, cut into strips or pieces
- 1 carrot, cut into thin strips (approx 100g)
- 2 stalks celery, cut on an angle (approx 100g)
- extra 1 Tbsp corn starch
- Spring onion, sliced, to decorate
- Preheat oven to 230 C, FF
- Line a baking tray with baking paper and spray with oil.
- Pace corn starch, five spice and seasonings into small bowl.
- Place a large bowl onto mixing bowl lid and weigh pork into it.
- Add egg and mix together.
- Add cornstarch mix to the pork and mix well. Pop in the fridge while preparing sauce. If time, allow to marinate for 2 hours or more.
- When oven is hot, place pork pieces onto baking tray in one layer.
- Bake 15 minutes. Stir around and bake a further 15 minutes.
- Set aside in ThermoServer until sauce is ready.
- Place simmering basket onto mixing bowl lid and weigh rice into it. Rinse well and set aside.
- Place garlic and ginger into mixing bowl and chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula.
- Add oil and sauté 3 minutes/Varoma/sp 1.
- Add tomato passata, tomato paste, soy sauce, vinegar, sugar, pineapple and reserved 50g juice, onion, capsicum carrots and celery and cook 8 min/120°C/R/speed 1.
- Add a little water or pineapple juice to extra corn starch to make a paste. Add to bowl and cook 2 min/100°C/R/speed 1.
- Don't wash bowl. Place 1000 g water into mixing bowl, insert simmering basket with rice and cook 15 min/Varoma/speed 4.
- Serve Sweet and Sour Pork with rice on the side. Decorate with sliced spring onion.
