Low Carb Tuna Slice/Quiche

Ingredients
  • 2 spring onions, diced finely
  • 100g diced cooked pumpkin or sweet potato
  • 100g broccoli, diced finely
  • 1 x 185g can tuna in olive oil
  • 100g cream cheese
  • 100g cream
  • 100g grated cheddar, divided into 2 x 50g
  • 5 eggs
  • 1 heaped tsp lemon pepper
Method
  1. Preheat oven to 180.
  2. Place vegetables and tuna into a 20cm square casserole dish.
  3. Add cream cheese, cream, 50g of cheddar, eggs and lemon pepper to Thermomix bowl. Drain the oil from the tuna into the mixture.
  4. Mix 15 sec/sp 4.
  5. Pour over vegetables and tuna. Top with the extra 50g grated cheese.
  6. Bake 30 minutes or until bubbling and golden on top. It will be puffy, but will deflate on cooling.
  7. Serve warm with a tossed salad.
  8. Or cut into small pieces and have as a snack.
