40 Second Cupcakes

Easy and delicious
Ingredients
  • 150g raw sugar
  • 125g cold cubed butter
  • 2 eggs
  • 1 tsp vanilla
  • 125g buttermilk (or milk soured with a little vinegar)
  • 215g self-raising flour
Method
  1. Preheat oven to 180 non FF.
  2. Line cupcake pan with patty pans.
  3. Add sugar to Thermomix bowl and mill 10 sec/sp 10.
  4. Add butter and mix 10 sec/sp 6.
  5. Scrape around base and add remaining ingredients.
  6. Mix 10 sec/sp 5.
  7. Scrape well and mix again 10 sec/sp 5.
  8. Spoon into patty pans ⅔ from the top.
  9. Bake 20 - 22 minutes depending on your oven and size of your tin.
  10. Makes 10 in a muffin tray.
Notes
For Chocolate Cupcakes, simply add 30g cocoa and and extra 15g buttermilk.
