Do you enjoy garlic bread? Here is a different way to make it. Instead of using a baguette, you can make your own scrolls filled with luscious garlic and herb butter, all made in the Thermomix!
I had loads of discounted cream in my freezer, so I used it to make parsley and garlic butter. The leftover buttermilk was then used in the scroll dough. Waste not, want not!!
Here’s the recipe for the scroll dough. You can find the Herb and Garlic Butter recipe made from scratch with cream on Cookidoo.
IMPORTANT: Many Spring Form tins will leak the butter out. Line the whole base and up the sides with baking paper.
- 230g buttermilk or water
- 2 tsp yeast
- 1 tsp sugar
- 400g baker's flour
- 40g oil
- 1 tsp salt - add an extra teaspoon if butter is left unsalted
- Make herb and garlic butter (Cookidoo recipe).
- Add buttermilk, yeast and sugar to Thermomix bowl.
- Heat 3 min/37/sp 2.
- Add remaining ingredients and set 3 min/Dough mode.
- Remove to a greased bowl or to Thermomat.
- Cover bowl and allow to prove for at least an hour and a half or until doubled in size.
- Turn out on to a lightly floured bench or to Thermomat.
- Roll or press out to a rectangle 28 cm wide.
- Dot herb butter over the dough and spread gently with spatula.
- Roll up and cut into 10 pieces with dental floss or fishing line.
- Place scrolls close together into a 23cm lined springform pan.
- Cover and allow to rise for another hour and a half or until almost at the top of the pan.
- Bake for around 35 minutes in a preheated 180c oven.
- Cool in the tin for about 20 minutes then remove to a wire rack.
