Yes! These cupcakes take only 40 seconds to mix in the Thermomix. I’ve only made them in the TM6, so if you have a TM31 you may need to add a couple of seconds to each mix and scrape down well.
They are light and fluffy and rise beautifully. I put them on the lower shelf on my oven to prevent ‘peaking’ of the tops.
I use the Rose Gold Muffin Tray from the Mix Shop and this recipe makes 10 large cupcakes.
- 150g raw sugar
- 125g cold cubed butter
- 2 eggs
- 1 tsp vanilla
- 125g buttermilk (or milk soured with a little vinegar)
- 215g self-raising flour
- Preheat oven to 180 non FF.
- Line cupcake pan with patty pans.
- Add sugar to Thermomix bowl and mill 10 sec/sp 10.
- Add butter and mix 10 sec/sp 6.
- Scrape around base and add remaining ingredients.
- Mix 10 sec/sp 5.
- Scrape well and mix again 10 sec/sp 5.
- Spoon into patty pans ⅔ from the top.
- Bake 20 - 22 minutes depending on your oven and size of your tin.
- Makes 10 in a muffin tray.
