This is a delicious blend of spices that go well with any meats or vegetables.
When using with meat, I like to add a little bicarbonate of soda to the mix when marinating. This helps to break down the fibres in the meat and make it more tender. It’s the Chinese Restaurant trick!
I particularly like this blend with thin strips of lamb, skewered, then grilled. And the best sauce to serve is the one from Cookidoo – Easy Satay Chicken.
- 2 Tbsp coriander seeds
- 2 Tbsp fennel seeds
- 1 Tbsp cumin seeds
- 3 tsp caster sugar
- 3 tsp turmeric powder
- 1½ tsp ground ginger
- ¾ tsp ground cinnamon
- ¾ tsp ground black pepper
- ¾ tsp ground cloves
- ¾ tsp ground cardamom
- ½ tsp Chinese five spice
- ½ tsp ground fenugreek
- Place coriander, fennel and cumin seeds into Thermomix bowl and mill 30 seconds/sp 10.
- Add remaining spices and sugar and mix 1 minute/speed 2.
- Place in a jar and label with the following instructions:
- To use:
- Mix 1½ tsp bi-carb soda into 2 tablespoons of the Satay Spice Blend. Sprinkle over meat or vegetables and marinade overnight.
- Thread meat or vegetables onto soaked skewers and BBQ or cook over a char grill.
- Or, spray with a little oil and cook in the air fryer or frying pan.
