Our favourite Fish & Chip shop makes a delicious Health Bowl. It’s a poke bowl with grilled fish and they have the most divine dressing that I reckon is a Green Goddess. It’s light, tangy and herby and goes so well in this dish.
Most Green Goddess Dressings contain yoghurt, mayonnaise or buttermilk, but I wanted to create one that was oil and vinegar/lemon juice based. And I nailed it!
Fresh herbs are best, but I didn’t have any fresh chives or tarragon, so had to use dried. Luckily, my parsley and basil were abundant.
Give it a go and let me know your thoughts.
- 4 tsp caster sugar
- 1 Tbsp Dijon mustard
- ½ tsp onion powder
- Handful basil leaves (about 15g)
- Handful parsley leaves (about 12g)
- 1 tsp dried tarragon
- 1 tsp dried chives (or 6 fresh)
- 50g fresh lemon juice
- 50g apple cider vinegar
- 90g light tasting olive oil
- Add everything to the Thermomix bowl and blend 10 sec/sp 7.
- Pour into a glass jar.
If you have leftover baby spinach leaves, toss them in as well.
Perfect with seafood, chicken or just as a salad dressing.
