When I find myself gaining a couple of kilos that I don’t need, I immediately switch my diet to low carb, high fat. It’s the fastest and safest way to lose weight without sacrificing foods I love.
I mean, who’s not to like bacon and eggs, or creamy scrambled eggs for breakfast? I do miss my homemade bread, but there are some quick and easy alternatives.
Pancakes are a breakfast favourite and these are delicious. You really wouldn’t know that they are low carb. Yes, I have a little maple syrup with mine, you could substitute keto syrup, but I like the real thing.
- 2 eggs
- 2 Tbsp milk
- 60g sour cream
- 80g almond meal
- 3 Tbsp whey protein isolate
- 1 tsp baking powder
- 15g melted butter
- Pinch salt
- Add everything to the Thermomix bowl and blend 20 sec/sp 7.
- Scrape down.
- Heat skillet and add a little butter. Pour portions onto skillet. Turn when bubbles show.
- Serve with maple syrup, berries, and cream
