My general rule in cooking is as additive free as possible, which is why make all of my spice mixes, curry pastes, stock pastes and seasonings. I know exactly what is in my food and it’s actually much cheaper to make than buy.
This one is a real favourite. Great to have on hand for a quick dip, to coat roast meat or roast potatoes, add to white sauce for cauliflower cheese and a myriad of other uses. It uses Beef Stock Powder, which can sometimes have undesirable additives.
I have found that Vegeta brand has no flavour enhancers and no preservatives. It also actually contains beef!
If you don’t like to use it, simply use salt, though probably only 3 Tbsp. The flavour won’t be quite the same. Massel Beef Stock Powder is a great vegetarian alternative.
- ½ cup roasted onion flakes
- 4 Tbsp beef stock powder (Vegeta Brand) or simply use salt
- ½ tsp onoin powder
- ½ tsp dried parsley
- ¼ tsp black pepper
- ¼ tsp celery seeds
- ¼ tsp paprika
- Place in Thermomix bowl and set 20 seconds/speed 5.
- Scrape into a jar. I use a pastry brush to get it all out.
- Use 2 Tbsp per ½ cup of sour cream for dips.
- Mix 1 Tbsp with 3 Tbsp oil and brush over potatoes before roasting.
You can use regular dried onion flakes, but it won't be as nice.
I generally double this recipe.
