With summer most definitely upon us, we’ve been eating a lot of salads lately.
I wanted to create something to jazz up a plain salad and thought a nice nut and seed mix would work well.
This doesn’t use the Thermomix except for weighing ingredients. It’s quick and easy to make and only needs your oven on for a short time. I use my Kogan air fryer because it takes a square cake tin perfectly.
You can substitute soy sauce for Tamari, but the flavour won’t be quite right. Tamari has twice as many soya beans so the flavour is much deeper and richer.
For a finer sprinkle, pop cooled seeds back into Thermomix bowl and blitz for 1 second on speed 5.
- 70g sliced almonds
- 50g pepitas
- 25g sunflower seeds
- 2- 3 tsp of Tamari (or soy sauce)
- 30g hemp seeds, optional
- Preheat oven to 190C FF.
- If using an air fryer that will take a cake tin, don't preheat. Set to 170C when placing tray in.
- Place a cake tin or slice tray onto Thermomix lid and weigh in the almonds, pepitas and sunflower seeds.
- Spread out on tray and bake for 5 - 10 minutes or until almonds are toasted. This will take 5 minutes in the air fryer.
- Turn oven to 100C (80 for air fryer) and remove tray.
- Pour over Tamari and place back into oven once temperature has been reached.
- Bake a further 10 - 15 minutes, stirring occasionally or until nuts and seeds are dry.
- Keep in a jar in the pantry.
