I’ve been looking for some savoury lunch ideas for my grandkids. Scrolls are the first thing that comes to mind, but I’m wanting to include more vegetables in their lunchbox snacks. So, I came up with this modified zucchini slice recipe.
I use this Silicone Mini Loaf pan. It’s so convenient – no greasing and no sticking. They simply slide out! The veggies in this recipe can be swapped around easily. Just try to stick to the quantities listed. For example, instead of carrot, try pumpkin or sweet potato. Instead of spinach, use kale. You could add capsicum and instead of ham, pop in some lightly cooked bacon or some salami or leave the meat out altogether and up the cheese quantity.
- 100g cheddar cheese, 2cm dice
- 150g SR flour
- 1 - 2 tsp onion powder
- 1 carrot, peeled, in chunks (around 100g)
- 1 small zucchini, in chunks (around 225g)
- 40g spinach
- 130g thick sliced ham, 2 cm dice
- 5 eggs
- 40g olive oil
- Preheat oven to 180C Fan-forced.
- Place 2 x Mini Loaf Pans onto baking trays.
- Place a medium sized mixing bowl on to Thermomix lid and weigh in flours. Add onion powder.
- Grate cheese 5 sec/sp 8. Remove to bowl with flour.
- Chop carrot 5 sec/sp 5 and remove to bowl.
- Chop zucchini and spinach 3 sec/sp 5 and remove to bowl.
- Chop ham 3 sec/sp 6 and remove to bowl.
- Add eggs and oil to Thermomix bowl and mix 15 sec/sp 5.
- Tip into bowl with the chopped ingredients and flours and mix with spatula.
- Scoop around 2 tablespoons of mixture into loaf tin sections.
- Bake for 25 to 30 minutes. Turn out onto a wire rack to cool.
- Keep in the fridge for up to 4 days.
Swap out carrot for sweet potato or pumpkin.
Swap out spinach for kale.
Swap out ham for lightly cooked bacon or some salami.
Swap out cheddar for crumbled feta - use less as it's salty.
