Dried Apricot Jam

An alternative to using fresh apricots when either out of season or too expensive to buy!

Ingredients
  

  • 700 g water
  • 500 g dried apricots
  • 600 g sugar
  • Juice of a lemon ~ 30g

Method
 

  1. Place water and apricots into Thermomix bowl and set 10 min/50/speed soft.
  2. Add sugar and lemon juice and chop on speed 4 in 3 second bursts until desired consistency is reached. Scrape down.
  3. Cook 5 minutes/60/speed 2/Reverse or until sugar is dissolved.
  4. Place simmering basket instead of MC on top of Thermomix lid and cook 60 minutes/100/speed 2/Reverse. Test by placing a small amount on to a cold dish. If not quite set, cook a further 15 min/100/sp 2/R.
  5. Pour into sterilised jars. If jars have a pop down seal, tip upside down for 5 minutes. When turned back up, lids should pop down. Makes about 4 jars.

Notes

If you don't have any lemon juice, use a teaspoon or two or Jamsetta or tartaric acid.
These days, the softer, sweeter dried apricots are the most available and good value, so recipe has been edited to allow for one packet of dried apricots which is 500g. I've kept the original amount of water and reduced the sugar.
