Flat Hamburger Buns

Light and fluffy inside with a nice crunchy crust, these buns are perfect for burgers.
Course: Bread

Ingredients
  

  • 200 g water
  • 125 g whole milk
  • 2 tsp dried yeast
  • 2 tsp honey
  • 2 Tbsp olive oil
  • 600 g bread flour
  • 2 tsp bread improver optional
  • 2 tsp salt

Method
 

  1. Add water, milk, yeast (avoid blades) andhoney to TM bowl.
  2. Warm 3 minutes/37/sp 2.
  3. Add bread flour, salt and bread improver, if using and choose Dough/6 min.
  4. Remove to a greased glass bowl.
  5. Allow to rise in a warm spot until doubled. (See Notes)
  6. Tip out on to bench and shape into a log.
  7. Cut into 6 or 8 even sized pieces and roll into balls.
  8. Place onto a large baking tray, allowing room for spreading and cover with a silicone mat or baking paper.
  9. Press each ball down gently, Place a heavy baking tray the same size on top with some baking paper in between.
  10. Cover with a towel or large cloth and allow to rise for an hour in a warm spot.
  11. Preheat oven to 200C.
  12. Bake with tray on top for 15 minutes.
  13. Remove the top tray and bake for a further 10 minutes for 8 buns and 15 for 6.
  14. Tap to check that they are cooked. They should sound hollow.
  15. Allow to cool on a wire rack.

Notes

Proving your dough
If your kitchen is cold, there are a number of ways to prove your dough.
1. Place a mug half filled with water into the microwave. Heat 4 minutes on high. Remove and place dough in microwave to use residual warmth.
2. It it's a sunny day and your car is outside, pop the dough in the car.
I sometimes make 6 small rolls and use the remaining dough to make scrolls.
