Lemon Curd

When life gives you lemons, you make Lemon Curd! Delicious and tangy and perfect for making tarts or spreading on toast. This recipe makes two jars of luscious thick curd.

Ingredients
  

  • 220 g sugar
  • Thin peel of 2 lemons
  • 240 g butter, cubed
  • 200 g lemon juice
  • 4 eggs
  • 2 egg yolks

Method
 

  1. Place sugar with lemon peel into Thermomix bowl and mill 10 sec/speed 10.
  2. Add remaining ingredients. Cook 10 min/80°C/speed 5.
  3. Scrape down and cook a further 2 min/90°C/speed 6.
  4. Pour into sterilized jars and seal.

Notes

1. Use a mixture of lemons and limes for a different flavour.
