This recipe is one from Nigella Lawson, my foodie idol. It’s wonderfully versatile and very economical. There’s no need to buy those pancake mixes in the plastic bottles as this is just as easy and much, much nicer.
These pancakes are very similar to the “golden arches” sort. If you prefer a thinner pancake, use a little more milk.
Pantry Pancake Mix

Cheap and versatile mixture that keeps in the pantry ready for that craving on a Sunday morning!
Ingredients
- 600g plain flour
- 50g baking powder
- 50g castor sugar - less if liked (mill raw sugar 10 sec/sp 9)
- 2 tsp bi-carb soda
- 1 tsp salt
Method
- Add everything to the Themomix bowl and mix on 5 sec/sp2.
- Place in a large glass jar and store in the pantry.
- Print off the recipe for making the pancakes and stick on the outside of the jar.
Notes
You can also make the recipe even easier by adding 155g milk powder to the mixture.
Use 250g water when making the pancake batter.

Ingredients
- 10g butter
- 250g milk
- 1 egg
- 150g pancake mix
Method
- Add butter to Thermomix bowl.
- Melt 20 sec/sp 2.
- Add remaining ingredients and mix 30 sec/sp 3.
- Cook as normal.
Notes
For a dessert pancake, add some chopped banana and serve with caramel made from cream, butter and brown sugar boiled together (sticky toffee pudding sauce).
For pikelets, just add a little more sugar. You can also add chopped dates and orange rind or orange and date pikelets.
