(This recipe was updated on 26th Oct, 2020. And again on 12th Oct 2022 – I reduced the sugar from 145g to 120g.)
These delicious morsels are a favourite for the childrens’ birthdays. They’re easy to make and the recipe can be doubled.
I find that Woolworths Home Brand Cocoa is absolutely divine for these. It’s rich and dark, (dutched cocoa) unlike Cadbury’s bland offering.
This recipe was developed in the TM6. Makes around 12 medium sized cupcakes. If using a muffin tin, they’ll make 9 or 10.
- 50g cocoa powder
- 120g water
- 60g butter
- 60g oil - I use grapeseed
- 120g caster sugar
- 1 tsp vanilla extract
- 165g SR flour
- ½ tsp bi-carb soda
- 3 eggs
- Preheat oven to 170C.
- Line a 12 hole tin with patty pans.
- Place cocoa, water and butter into Thermomix bowl and melt 2 min 30 sec/55/sp 1.
- Scrape down and around base.
- Add oil, sugar, vanilla, flour, bi-carb and eggs.
- Mix 15 sec/speed 2.5. Scrape down and mix again on 15 sec/sp 2.5 until blended. Increase to speed 4 for a second or so to do a final blend.
- The mixture is fairly liquid. Pour into patty pans ¾ way up.
- Bake for 15 - 20 minutes or until the tops spring back when gently touched.
- Leave in the tin for a few minutes before turning out on to a wire rack to cool.
- Ice with Swiss Meringue Buttercream. Or for a quick Buttercream, try the Cookidooone.
