This is a delicious version of a coleslaw. It’s an all in one Thermomix recipe which, at a pinch, may be able to be made in a food processor.

I’ve renamed it, because it really is a coleslaw. I also added lemon rind as I love the flavour.
Polish Coleslaw

A deliciously different coleslaw without the creamy dressing.
Ingredients
- 1 large carrot, peeled
- ½ cabbage - around 250g
- 1 red or ½ green apple, cored
- ½ red onion
- small bunch parsley, leave only
- 3 Tbsp olive oil
- juice and zested rind of half a lemon
- 1 - 2 tsp sugar
- salt and pepper to taste
- Cornichons, chopped finely
Method
- Chop vegetables into chunks.
- Place carrots into Thermomix bowl and chop 4 seconds/speed 5. Remove to a bowl.
- Place remaining ingredients, except cornichons into Thermomix bowl. (I only do half at a time, but then you need another bowl to put the mix into).
- Chop for 4 seconds/speed 4, helping with spatula. Check consistency and repeat for a few seconds if necessary.
- Add cornichons and mix in with spatula or use to decorate.

It is really lovely Clare. It's not a sweet coleslaw as such, more sweet and sour.
