Re-visiting this recipe in April 2024, as I’d forgotten about it. The brilliant thing about this way of reverse searing steak (it wasn’t known as this when I developed the recipe back in 2012!) is that it can be done hours ahead.
Lately, any steak I cook has been terrible! Tough and chewy, even though it’s pink inside. Then, I remembered this!
You can do 4 steaks, but I only need to do 2 now. Make sure they’re not too thick – about 2 cm. If they’re any thicker, or you are cooking more than 2, add an extra couple of minutes.
This recipe was originally designed for the TM31, but I now use the TM6. It will heat water much faster, so if you have a TM31, use hot water. (and message me for information on the TM6!)

I’ve been reading about sous vide cooking, where food is vacuum packed, then cooked in a water bath at a controlled temperature. With the Thermomix cooking at specific temperatures, I imagined it would work well. Trouble is, it takes ages.
I love experimenting, so thought why not do the vacuum packing, but then steam the food? And that’s exactly what I did with our scotch fillet last night for tea.
- 2 scotch fillet or porterhouse steaks
- 2 Tbsp Soy Sauce
- 2 Tbsp Tomato Sauce
- 1 Tbsp Worcestershire Sauce
- 1 tsp onion powder
- ¼ tsp garlic powder
- 3 Tbsp cream
- ¼ cup water
- cornflour slurry
- Mix marinade ingredients in a small bowl.
- Place each steak into a ziplock bag. Add 2 Tbsp marinade to each bag and seal.
- Smoosh around to coat steaks.
- Place side by side in Varoma bowl.
- Add 500g water to Thermomix bowl. Place Varoma on top.
- Set 8 min/Varoma/sp 2.5.
- Remove carefully and set aside, reserving marinade for a sauce. If planning to cook much later, refrigerate. Bring to room temperature before cooking.
- Preheat BBQ or pan.
- Dry steaks with paper towel and spray lightly with a little oil.
- Sear on each side for 1 to 2 minutes, depending on thickness of steaks and desired doneness.

Love this post Megan! I don't have a BBQ, but you've got me thinking about the ScanPan now. I love the idea of steaming, then sealing. Thanks! I bet you could really influence a few people by serving this up at a Thermomix demo … maybe just one bite each… 'leave them wanting more' as they say 😉

Yes. It doesn’t quite get to Varoma temperature, but that’s fine. Make sure steaks aren’t too thick.
