I haven’t posted a recipe for ages! I’ve been so busy with my ‘other’ lives – as a Marriage and Funeral Celebrant and a Younique Presenter.
This recipe is so delicious, I just had to put in down for posterity. It’s one of Jamie Oliver’s that I’ve converted to the Thermomix. This will quickly become a favourite. I reckon you could add some cooked chicken and bacon and you’ve got a meal!
- 2 slices day old ciabatta or sourdough
- small handful flaked almonds
- glug of olive oil
- Salt and Pepper
- Small head of cauliflower or half a regular cauliflower, broken into large pieces
- 1 clove garlic
- 35g butter
- 35g plain flour
- 350g milk
- Small head of broccoli - trim and peel stems and include
- Place bread into Thermomix and break up into breadcrumbs for about 5 seconds/speed 4.
- Add flaked almonds and break up - about 3 seconds/speed 3. Season with salt and pepper.
- Place into a container and pour over oil. Set aside.
- Prepare cauliflower and broccoli. I peel the stem of the broccoli and use it as well.
- Steam, microwave or boil cauliflower. Drain well. I microwave mine in the pyrex bowl in which I'm going to bake it.
- Preheat oven to 190C.
- Add garlic to Thermomix bowl and chop on speed 5 for 5 seconds.
- Scrape down and add butter.
- Saute for 2 minutes/100/speed 1.
- Add flour and repeat.
- Add milk and mix for 30 seconds/speed 3.
- Add broccoli and cook for 20 minutes/100/speed 1.5, MC on.
- Blend for 7 seconds/speed 4.
- Season with salt and pepper
- Pour sauce over cauliflower and top with breadcrumb mix.
- Bake for 20 minutes or so until bubbling and topping is crunchy.
