Some of you will know that I’m back on the Low Carb Healthy Fat wagon. I’m feeling so much better that I think it may become a lifestyle choice.
I have quite a few recipes that I love, so I’ll start popping some here for those who are keen to join me in this way of eating.
There is so much evidence to show that eating this way can help with reducing so many chronic conditions – Type II diabetes, PCOS, insulin resistance, fibromyalgia, joint pain and many more. Plus, the bonus is weight loss!

And, here’s my recipe.
- 2 spring onions, diced finely
- 100g diced cooked pumpkin or sweet potato
- 100g broccoli, diced finely
- 1 x 185g can tuna in olive oil
- 100g cream cheese
- 100g cream
- 100g grated cheddar, divided into 2 x 50g
- 5 eggs
- 1 heaped tsp lemon pepper
- Preheat oven to 180.
- Place vegetables and tuna into a 20cm square casserole dish.
- Add cream cheese, cream, 50g of cheddar, eggs and lemon pepper to Thermomix bowl. Drain the oil from the tuna into the mixture.
- Mix 15 sec/sp 4.
- Pour over vegetables and tuna. Top with the extra 50g grated cheese.
- Bake 30 minutes or until bubbling and golden on top. It will be puffy, but will deflate on cooling.
- Serve warm with a tossed salad.
- Or cut into small pieces and have as a snack.
